WHAT IS KEBAB?

Kebabs are mainly cooked meat and chicken dishes on a skewer over a fire, with many variants which are popular throughout the middle east, Asia and around the world. North Indian chicken Malai and Pahadi kebab are great speciality for any barbecue gathering.

INGREDIENTS

Malai Kebab
1 kg chicken tights
60 g ginger garlic paste
2 g white pepper
2 g green cardamon powder
300 g cashew nut paste
50 g fresh cream
30 g corn oil
2 g salt

Pahadi kebab
1 kg chicken tights
60 g ginger garlic paste
300 g blanched spinach puree
3 g kitchen king
4 g tandoori masala
2 g ground cumin
2 g coriander powder
optimal green chili paste
4 g salt

METHOD OF COOKING
Step 1

Preheat the oven to 180 degrees C. For the Malai Kebab add ginger garlic paste to the sliced chicken mix well and marinate overnight. on next day add the rest of the ingredients, white pepper, green cardamom powder, cashew nut paste, fresh cream, corn oil and salt. Now keep the mixture to marinate in the refrigerator for 2 hours.

Step 2

Making the cashew nut paste is simple all you need to do is soak the raw cashew nut in cold water for 4 hours then place in a blender with little water and blend until reaches a thick paste.

Step 3

For the Pahadi kebab is the almost same process of the malai kebab but with different spices and additional spinach. Add ginger garlic paste to the sliced chicken mix well and marinate overnight. on Next day add the rest of the ingredients, blanched fresh spinach puree, kitchen king, tandoori masala, cumin powder, coriander powder and salt. Now keep the mixture to marinate in the refrigerator for 2 hours.

Step 4

The blanched spinach should be blended with little water until reaches a thick spinach puree. I’m sure that you don’t have a tandoor at home, instead will use a simple and easy technique to have a beautiful texture.

Step 5

Slice two equal potato into a big rectangular shape. String the chicken pieces onto skewers while adding the Potatoes into both corners.
The purpose of placing the potato into the border is to prevent the chicken to touch the surface which will cook evenly. Bake the kebabs on 180 c for 10 minutes.
