Pistachio Matcha Soufflé a Dessert to die for. This Green Tea and nutty Souffle is simply irresistible. Light, fluffy and perfectly rich. These individual-serving Soufflé are glorious!

WHAT IS SOUFLE?

The soufflé, Bien Sur! Soufflés are baked fluffy cakes made with beaten egg yolks and beaten egg whites combined with flour, butter, sugar and milk. Making them is actually an easy process, despite their reputation. They are crispy from the outside and light from the inside.

INGREDIENTS

35 g unsalted Butter 
35 g all-purpose flour  
5 g salt  
35 g pistachio paste 
65 g  caster sugar  
20 g matcha powder 
190 g full-fat milk
140 g white chocolate  
3 medium egg yolk
3 medium egg white
25 g granulated sugar

EQUIPMENTS

rubber pastry spatula
sauce pan
ramekins
mixing bowls

Pistachio Matcha Soufflé recipe
METHOD OF COOKING  
Step 1

Pour the milk into a big bowl followed with the powdered matcha, granulated sugar, pistachio paste and milk. Whisk until well incorporated then strain properly leaving no lumps. Transfer the mixture into a saucepan.

Step 2

Warm the milk over medium heat bringing into a very light boil. Use your fingertips to quickly and lightly rub the flour and butter together until it resembles a dough. Place the flour-butter mixture into the combination and whisk gently for about 1 minute until a sticky gummy texture is formed. Remove from the heat then ransfer the Chocolate into the milk mixture and whisk again until the chocolate melts and incorporates properly. Lastly, on low heat, add the egg yolk and mix well until they lighty bubbles and thickens. Set aside and cool before adding the egg whites.

Step 3

Using an electric whisker, in a large bowl, whisk the egg white into a light foam then add the sugar and whisk again until soft peaks begin to form. The egg whites should look like clouds. Gently fold the egg white clouds into the chocolate mixture, use the rubber pastry spatula to go round the outside and cut through the inside, the aim is to fold in the air bubbles slowly without breaking them up.

Step 4

Butter the ramekins thoroughly, do not miss any spots it will cause the soufflé to stick. Add a bit of sugar then rotate the ramekins slowly until the sugar covers all the borders and shake for any excess. Poor the fluffy mixture into the ramekins and level them properly and removing the excess using a spatula. Run a thumb with a napkin around the inside rim of the ramekins, this will help the soufflés to rise evenly.

Step 5

Place the ramekins on a baking tray in the oven for about 12 to 14 minutes on 200-degree Celsius until they rise. Do not open the oven during the cooking period. Always watch them carefully. Time may vary depending on the ramekins size and various ovens. Dust the icing sugar and serve hot with creme Anglaise. Marc has many desserts which you can make at home
