WHAT IS BRIOCHE?
Brioche bread is a French pastry, with an amazing buttery flavour and a fluffy texture. Brioche dough contains flour, eggs, butter, milk, yeast, salt, and sometimes sugar.
INGREDIENTS
1 kg t55 flour
150 g Sugar
30 g salt
25 g bread improver
40 g dry yeast
650 g full fat milk
1 lemongrass stalk
150 g unsalted butter
30 g egg yolk
50g whole egg
cooking spray
EQUIPMENTS

METHOD OF COOKING
Step 1
In a medium saucepan over moderate heat simmer full-fat milk with finely chopped lemongrass for approximately 5 minutes. Strain the milk while keeping the chopped lemongrass aside.
Step 2
In the bowl of an electric stand mixer, combine the flour, dry yeast, sugar bread improver, blanched chopped lemongrass and the warm infused milk. Using the dough hook mix the ingredient on low for a few minutes, then increase the speed to medium and continue to mix for about 10 minutes until the dough is smooth and moderately elastic. Add the butter and mix well until the butter is well incorporated. The dough texture should be sticky, light and fluffy.
Step 3
On a clean surface use the cooking spray and place the dough, cover with a kitchen towel and allow the dough to rest for about 30 minutes. While waiting for the dough to rest let ‘s prepare the lemongrass sticks, Using a knife, trim off the white end of the bashed lemongrass stalk and woody thinly part from the top.
Step 4
Shape the dough into small balls of 30 grams and tap gently using your side hands to flatten the 30g dough into a circle about 3 inches then fold it and roll the folded dough lightly using your finger on the flat surface. Grap the top of the dough and fold around the lemongrass. Repeat this process until all lollipops are done and rest for 30 minutes.
Step 5
Let’s make the egg wash! Crack the eggs into a bowl and beat it thoroughly with a fork. Use a pastry brush to brush the egg wash onto the surface of the lemongrass lollipops.
Step 6
Bake the lemongrass lollipops on 210 C for 12 minutes until they’re golden brown. Remove them from the oven and cool them on a rack.
