Drunken noodles recipe from scratch. This Thai noodle dish is a very popular in Thailand. You will be surprised how fast and easy this recipe is to make. Flat fresh thai rice noodles are not easy to find, worry no more!
WHAT DOES DRUNKEN NOODLES TASTE LIKE?
Thai drunken noodles know as Pad kee mao is a usually a spicy noodle stir-fry dish that includes more vegetables, such as baby corn, snow peas, and Thai basil with a thick, savory sauce made of oyster sauce, fish sauce, soy sauce and sugar. The Noodles are chewy and soft. Often includes ground pork or sea food as the protein.
INGREDIENTS
Rice flour 1 cup
Tapioca flour ½ cup
Water 1 ½ cup
Canola oil 3 Tablespoon
Large prawns 2
Squids tentacles 5
Squids 5
Garlic gloves 2
Thai chilies 1
Sugar 1 Teaspoon
Oyster sauce 1 Teaspoon
Dark soya sauce 1 Teaspoon
Soya sauce 1 Teaspoon
Baby corn 3 sliced in half
Asparagus 4
Shiitake mushrooms 4
Thai basil or Basil leaves 8 leaves
Diced Sweet chilies 1
EQUIPMENTS
Steaming pot
Flat trays or round trays
Stir fry wok
Cooking Brush
METHOD OF COOKING
Step 1
Add the rice flour, tapioca starch and water to a mixing bowl. Mix and dissolve everything together properly. Bring the water of the steaming pot to a boil .Brush a light coating of oil in a round tray that fits insides the steaming pot and add the liquid to the round tray. Tilt it a little so the rice liquid covers the entire round tray. Be sure not to poor to mush liquid because you need your flat noodles to be thin. Place the tray on top of the steaming pot while the water is surely boiling. Steam for around 8 to 10 minutes until the mixture color turn white Mat. Using a spatula loosen all sides of the sheet of noodle, and slowly lift it up and off the tray. Stack them above each other on a cutting board. Slice them to your liking then separate them from each other.
Step 2
Preparing the mise en place for the drunken noodles. Use a mortar and pestle and pound the garlic and chillies with a pinch of salt to a rough paste and set a side. In a small bowl add the sugar, oyster sauce, dark soya sauce and soya sauce and mix well together until the sugar dissolves. Slice all the vegetables thick cuts or to your likings.
Step 3
Heat the soya oil in a wok over high heat then place the prawn and stir fry until half cooked. Add the remaining sea food then add the pounded garlic and chili, followed with the sauce mixture that we did in the mise en place paragraph. Cover with a lid and allow the seafood to cook for another minute .
Step 4
Then toss through the Asian vegetables, sliced asparagus, Shiitake mushrooms, the baby corn and the sweet chilies leaving the basil till the end .Place the flat noodles and stir fry the entire combination until everything is properly mixed. Toss through the basil and serve.
