WHAT IS YOUR FAVORITE CAKE?
Carrot cake is an extra moist cake containing grated carrots topped with cream cheese frosting. However, the carrot is not the primary ingredient instead it’s flavoured with a blend of spices.
INGREDIENTS
10 eggs
150 g icing sugar
300 g all purpose flour
175 g ground Almonds
375 g ground Hazelnut
30 g baking powder
5 g cinnamon
5 g nutmeg
500 g grated carrots
Raisins are also optimal
Frosting
100g unsalted butter
1 tablespoon vanilla extract
100 g icing sugar
300 g packages cream cheese
METHOD OF COOKING
Step 1
Preheat oven to 170 degrees C. In a dough mixer using the wire whip, mix together sugar and eggs until well combined. Stop the mixer and add all dry ingredients, flour, ground almonds, ground hazelnut, baking powder, cinnamon, Nutmeg and Lastly, add in the grated carrots and mix gently until well incorporated.
Step 2
Coat the silicone mould with some cooking spray. Pour mixture into the mould and place in the oven to 170 C for 20- 30 minutes. Leave to cool for 10mins. Tips on using a Skewer to check the perfect baking temperature. Place the skewer into the carrots cake and remove. If you see little moist batter not dry neither completely moist on the skewer it means is perfectly moist, tender. Most importantly, this is the texture that we are looking for.
Step 3
Let’s make the frosting. In a large bowl, after cleaning the bowl off course… Using the electric mixer on medium-high speed place the vanilla extract, cream cheese, icing sugar and the room temperature butter. Beat at medium-high speed until thoroughly blended and smooth. Do not overbeat. Refrigerate and use as needed.
Step 4
Slicing the cake into 3 equal layers. You’ll need a small pairing knife and a large bread knife. The cake should be chilled because it will be firmer to slice. First, using a paring knife, score horizontally the entire outside edge of the cake. This is simply to mark the cake. Second, using the bread knife and cut through the cake along the marking made with the paring knife. Use the knife to lift gently the layers. Repeat the same process until you have 3 equal layers.
Step 5
Carrot cake assembly. Place the first layer at the centre of the cake stand. With a spatula, spread generously and evenly the frosting. Centre the second layer than the third layer repeating the same process without frosting the top last layer. Using your hands, press firmly but gently, all layers together to make the cake firmer. With the spatula, spread the remaining of frosting to cover top and sides of cake. Use your imagination to create your own toppings to this fun to make-
