WHAT IS NAVRATAN KORMA ?
Navratan korma is a classic delicious Mughlai speciality. It’s a vegetarian dish made with vegetables and Indian cheese “Paneer” or both and dried fruit. The flavour of a korma is based on a mixture of masala combined with a creamy texture and is not spicy.
INGREDIENTS
Sliced Kenya beans 4 tablespoon
Carrots diced 4 tablespoon
Potato diced 4 tablespoon
Cauliflower diced 4 tablespoon
Mushroom 4 tablespoon
Green peas 4 tablespoon
Red capsicum diced 2 tablespoon
Green capsicum diced 2 tablespoon
Ginger 2 tablespoon
Garlic 3 cloves
Red onion 1 small
Cashew nut 1/2 cup
Green cardamom 5 pieces
Bay leaves 2 pieces
Cinnamon 1 sticks
Coriander powder 1 Teaspoon
Cumin powder 1 Teaspoon
Turmeric powder 2 Teaspoon
White pepper 1 Teaspoon
Salt 1 Teaspoon
Sugar 1 Teaspoon
Fresh cream 5 tablespoon
Butter 1 Tablespoon
Paneer Diced 2 tablespoon
Pineapple Diced 2 tablespoon
Fresh coriander 4 leaves
Red current 5 pieces
Raisins 5 pieces
Cashew nut 5 pieces
Sliced dried apricots 5 pieces
EQUIPMENTS
Medium size Cooking pot
Medium size bowl
Strainer
Whisk
Electric blender
Wire skimmer
METHOD OF COOKING
Step 1
Firstly, blanch all the medium size diced vegetables written in the first ingredient section, Sliced kenya beans, diced Carrots ,diced Potato, diced Cauliflower, Mushroom, green peas, diced red capsicum and diced Green capsicum. Do not over cook them, we required the vegetables to sill have some crunchiness then set aside.
Step 2
Secondly, in boiling water place the cashew nuts paste ingredients, Diced ginger, garlic cloves, medium diced red onion, whole Cashew nut soaked in water for one day, whole Green cardamom, bay leaves and the cinnamon sticks, until soften and blend the mixture for smooth texture and strain the combination until properly fine.
Step 3
Thirdly, heat the cooking oil in a large skillet over medium heat. Place all the masala written in the third section, coriander powder, cumin powder, turmeric powder, white pepper, salt and sugar and mix for around 3 minutes to release all the aroma’s. Poor in the full fat cream and butter.
Step 4
Fourthly, poor the cashew nuts paste that we did and Reduce the heat and simmer. Add in all the blanched vegetables, stir then finalize by adding the diced Panner cheese and pineapple. Lastly, decorate the dish by adding the last section in the ingredients. Red current, dried Raisins , fried Cashew nut, coriander leaves and Sliced Dried Apricot.
